‘Siccagno’ Tomato Paste (known as ‘Astrattu’ in Sicily) is realised with hand-picked Siccagno tomato. The only ingredient added is salt.  
It is ideal to season tomato and meat sauces. Try it to enrich delicious mirepoix too!

At the heart of the Madonie mountains, few kilometers from Palermo, it is possible to cultivate tomatoes with no water thanks to clay and sand soils, and this area position (400-800 meters above sea level). Tomatoes are harvested manually in August/September, placed in crates and moved to the processing settlement few kilometers far. Production yields are very low; it is not possible to compare this quantity with the contemporary industrial agriculture. Thanks to a second manual selection, the best fruits are collected to be processed after not more than 48 hours from harvest. The best ripening conditions and processing at a moderate temperature allow to preserve deep taste of the raw material. Today processing is different from the traditional one; in the past tomatoes were split and put on wooden layers under sunlight characterizing the hinterland landscapes. 

‘Siccagno’ Tomato Paste is a mix of flavors of typical Sicilian cuisine tradition with no preservatives: just Siccagno tomatoes and salt. This product is realized with hand-picked Siccagno tomatoes and salt.
