At the heart of the Madonie mountains, few kilometers from Palermo, it is possible to cultivate tomatoes with no water thanks to clayey and sand soils, and this area position (400-800 meters above sea level). Tomatoes are harvested manually in August/September, placed in crates and moved to the processing plant few kilometers far.  Production yields are very low; it is not possible to compare this quantity with the contemporary industrial agriculture. Thanks to a second manual selection, the best fruits are collected to be processed after not more than 48 hours from harvest. The best ripening conditions and processing at a moderate temperature allow to preserve deep taste of the raw material and organoleptic principles: despite its low food energy intake, tomatoes contains antioxidants such as lycopene, beta-carotene, and vitamin C. 

Warmed up for few minutes, our Siccagno Tomato ‘Passata is ready to be served.
