Our semidried ‘Pomodoro Ciliegino di Pachino PGI’ (cherry tomato from the southeast coast)is sun-dried. It owns all fragrance of freshly harvested fruits. This produce has the PGI label (protected geographic indication): it cannot be cultivated in any other area trying to obtain the same top quality results. 
Try it for savory happy hours and to enrich special and delicious first courses.

This tomato variety is cultivated along the coastline of south-eastern Sicily, inside greenhouses to protect these fruits from the climate variations between day and night. The features of this area, high salt content irrigation water and high temperatures  – that are assured by the most unique sun exposition in Europe - give this variety exclusive characteristics: high content of sugars, mineral salts, lycopen and vitamin C. Manual harvest and fruit collection in crates, knife-cut, cooking with sugar and lemon juice: cherry tomatoes are processed through these steps in 24 hours from the harvest (no preservatives). After a short drying – at this step cherry tomatoes are savory and crispy – tomatoes are selected again: the best fruits are minced, mixed with other ingredients, pasteurized, and preserved in glass jars with no preservatives.

Once cherry tomatoes are dried in open air, the fruit is still savory and crunchy; in the past farmers let split tomatoes rest on wooden layers under direct sunlight. We can affirm this old tradition is still alive.
