Spaghetti, a drizzle of extra virgin olive oil, a sprinkle of tuna bottarga, and… enjoy! A great idea for an easy, quick, and delicious first course! 

Bottarga is tuna roe pouch. It is an artisanal food product processed traditionally in Marzamemi, a small seaside village few kilometers from Syracuse, by Campisi.  After manual salting, tuna roe pouches rest between two wooden layers; they are pressed constantly by some light loads till the final dehydration. After that, tuna roe pouches lay under direct sunlight for an open air maturing without time constraints: the maturing phase of the richest roe pouches can go over 30 days. 

In the past tuna ‘bottarga’ was considered a humble food product: tuna workers’ wives learned how to exalt its flavor and taste transforming a humble meal into a delicacy so much appreciated today.
