Fusilli are produced using only Sicilian durum wheat; they are bronze drawn and dried at moderate temperatures.  

Try this special pasta format characterized by a helicoidal shape, perfect to retain sauces. It is ideal to be served al dente with rich meat or vegetable sauces.

Wheat is usually sown on the Madonie – at more than 400 meters above sea level - in fall after a light soil ploughing and the first rainfalls before winter. Farmers have chosen the most suitable varieties in accordance with the area features; the most common variety is simeto, chosen for the pasta production being rich in gluten and proteins (the percentage is never lower than 12.5%). The wheat harvest starts in mid-June when sheaves are deep yellow. Thanks to the warm climate, Sicilian durum wheat is not at risk of mold and toxins. Its preservation is ensured by the natural air recirculation. Wheat is milled and processed in pasta within a few kilometers. The obtained flour is mixed with water from the natural springs in the Madonie Regional Natural Park. Here water springs flow at more than 700 meters above sea level, far away from any source of pollution. The obtained dough is processed through bronze drawplates and, then, dried at moderate temperatures. 

Water from the Madonie Regional Natural Park, bronze drawplates, moderate temperatures: these are the main ingredients of our selected fusilli keeping Sicilian durum wheat flavor and nutritional qualities  unchanged.
